Production steps:
Step 1: cut the fish along the bone and set aside. Soak the scallion, ginger and pepper in sweet rice wine and set aside.
Step 2: scrape the minced fish along one side with a knife.
Step 3: put the scraped fish on the chopping board and continue to chop it with a knife for about 15 minutes. Be sure to chop the fish very fine.
Step 4: add egg white, starch, onion, ginger, water and salt to the good fish.
Step 5: be sure to stir in one direction, and the better the mixing.
Step 6: put the mixed fish paste into the decoration bag, and cut a small opening in front of the bag. (don't make it too big. Cut it down first. If it's not easy to squeeze, then cut it up slowly.)
Step 7: squeeze the minced fish into cold water to form a fish line, the length of which is optional.
Step 8: after squeezing all, turn on a low heat and cook slowly.
Step 9: when the fish noodles are ready, you can eat whatever you like.

Note: minced fish must be stirred vigorously, so the fish noodles are very strong. It's delicious to fry fish noodles or make soup.
