Focaccia
Introduction:
"Kaqia" is not the pronunciation of Qia, its last syllable is a bit like "Xia" (some phonetic symbols here are not obvious, originally intended to mark the international phonetic alphabet). It belongs to Italian flat bread, and the operation is not complicated. You can put your favorite spices on it, and the aroma is rich after baking. The most obvious feature is the dimples pressed down with your fingers. The bread is soft with less salty taste and unique flavor. "
Production steps:
Step 1: heat the required water until it feels warm, put yeast and sugar, and let it stand for 15 minutes;
Step 2: mix the salt and flour, then add the materials in step (1), mix the flour with KitchenAid to form a dough, then add olive oil, and then stir to form a smooth dough, put it in a large bowl coated with oil, and cover the dough with film;
Step 3: it's best to have a dough maker. If you don't have a dough maker in your kitchen, you can use the microwave oven to sting two cups of water until it's hot. Put two cups of hot water next to you, and then put the dough in. There will be a warm environment in the microwave oven. Close the door for about 90 minutes. You'd better not open the door in the middle of the way, otherwise the heating will run away. Don't press the button too much;
Step 4: after fermentation, put it on the chopping board, rub it slightly to remove the bubbles, then roll it round, close it down, and then cover it with film for 10 minutes;
Step 5: coat a layer of olive oil on the baking plate, so that it is easy to demould after baking;
Step 6: spread the dough flat on the baking plate and brush the surface with olive oil;
Step 7: poke holes evenly on the surface blank with fingers, not necessarily to the end;
Step 8: cover with film and let the dough ferment for 20-25 minutes;
Step 9: in the 20 minute interval, cut the onion into 1.5-2 cm long and wide pieces;
Step 10: after the dough is finished, use small scissors to cut a hole about 1cm deep between the dimples, insert onion slices into the hole, cut a hole to insert an onion, and cut and insert evenly;
Step 11: Sprinkle black pepper powder and coarse salt (sea salt) evenly;
Step 12: bake in the preheated oven for 15-18 minutes at 375-400 ° F. when baking for about 10 minutes, turn the baking basin 180 ° and then put it into the oven. After baking for the rest of the time, the toasted bread will make a "por por" hollow sound with fingers, indicating that it has been baked and can be eaten after being cut into pieces.
Materials required:
High gluten flour: 200g
Water: 100 to 115 G
Salt: 1 / 4 teaspoon
Baker's yeast: 2 / 3 tsp
Sugar: 1 teaspoon
Olive oil: 2 tsp
Black pepper powder: right amount
Onion: 1 / 4
Sea salt: moderate
Note: first, focaccia is flat bread, although the dough is flat on the baking plate, it will rise after baking; second, it is better to bake bread on the glass baking plate which can be used to put into the oven, the surface of the glass baking plate is smooth and easy to demould; third, the shape of focaccia can be round, square or rectangular, if it is square, the dough should be stretched to the four corners; 4、 The materials on focaccia's surface are not necessarily onions, but garlic slices, rosemary, nine layer tower or black olive slices. I prefer garlic slices and rosemary, and the effect is good this time. 5. The time and temperature provided on the sticker are only for reference, not absolutely accurate, because although the scale used in each family's oven is the same, the actual heat efficiency is low There are different degrees. You should adjust the time and temperature according to your own characteristics. For example, if you roast the food too much according to the temperature provided by a paste or book, you should lower the scale of the oven the next time you bake the food. If you bake the food too undercooked or enough according to the temperature provided by a paste or book, you should increase the scale accordingly, and the time is the same You should also adjust your oven accordingly. If you use it several times, you'll know better.
