Spicy salted fish

Production steps:
Step 1: salted fish is prepared in advance. Fresh fish head, dissection clean, fish belly can be left, remember not to remove fish scales. Spread salt inside and outside, hang it at the air outlet and air dry it. Put it into the freezer after air drying. Thaw it when you eat.
Step 2: put the salted fish in the pool and soak for one night. (salted fish itself is very salty. Soaking it for one night can make it light, so it won't be so salty when eating, and it can remove all the ash from salted fish.)
Step 3: wash the salted fish with hot water, remove the scales and fins, cut them into small pieces, wash them again, drain the water, and then open the fish bones and clean fish.
Step 4: slice lotus root, ginger and garlic. Cut parsley and dried pepper into sections. Cut the onion into rings.
Step 5: put a little oil in the pot, stir fry the lotus root and onion in the hot oil, add a little salt, stir fry until it is raw, put it on a plate and set aside.
Step 6: pour a large amount of oil into the pot. After the oil is hot, pour the meat with fish bones into the pot and fry until it has just changed color. Then pour in the fish and stir fry. When most of the fish become brown, add cooking wine and stir fry. After about 1 minute, drain the oil.
Step 7: remove the residue from the fried fish oil and pour it into the pot. When the oil is 80% hot, pour the ginger and garlic into the pot and keep frying. Don't paste it.
Step 8: when the taste of ginger and garlic comes out, pour in the dried pepper and Chinese prickly ash, stir fry for about 30 seconds, and be sure to wait until the taste of pepper, Chinese prickly ash, ginger and garlic comes out.
Step 9: when the flavor of the seasoning comes out, put the fried salted fish into the pot and stir fry for about 2 or 3 minutes. Stir fry the flavor of the seasoning into the salted fish.
Step 10: when the salted fish is fried with seasonings, pour in the fried lotus root and onion, stir fry evenly, add a small amount of sugar and chicken essence, stir fry well and serve.
Step 11: after serving, add coriander and scallion.
