Salted duck
Introduction:
"Salted duck is a traditional stewed duck dish, which is a specialty of Nanjing. It is one of the only low-temperature meat products in China. Salted duck tastes light and slightly salty, fat but not greasy, fresh and delicious. Salted duck can be made all year round, especially when osmanthus is in full bloom in August of the lunar calendar. It is said that the salted duck in this season has osmanthus fragrance, so it is also called "osmanthus duck."
Production steps:
Step 1: first, stir fry the salt hot, add the pickled seasoning salt, five spice powder and Chinese prickly ash into the pot, and start the "manual function", with four fires for four minutes;
Step 2: clean up the ducks in advance, dip in dry water with special kitchen paper, spread the fried salt on the ducks, and marinate them for 2 hours after spreading evenly;
Step 3: add 2000 ml water into the pot, add white bittern seasoning, heat it manually, bring to a boil, heat it over low heat for 5 minutes, and then cool the white bittern;
Step 4: soak the pickled duck in the cold white marinade for no less than 1 hour;
Step 5: put the soaked duck in a ventilated place and air dry for 1-2 hours;
Step 6: after air drying, put the duck into the white gravy for the second time, cover the pot, and start the function of white chop chicken with scallion oil for final cooking;
Step 7: after cooking, cool and cut into strips.

Ginger: 4 tablets
Water volume: 2000 ml
Precautions: 1. Adjust the amount of salt according to personal taste; 2. Clean the duck and remove the remaining hair with tweezers after air drying; 3. Rub the duck with salt evenly on both sides; 4. Omit the step of soaking white marinade, but marinate it for 3 hours after rubbing with salt; 5. Don't omit the step of air drying, otherwise the duck will taste bad.
