Wufangzhai zongzi production technology originated in Jiaxing, Zhejiang Province, and radiates to the Yangtze River Delta, which is a typical representative of Chinese traditional food production technology.
In the early years of the Republic of China, Zhang Jinquan set up a stall to sell rice dumplings in the North Street of Jiaxing City. Because of the unique shape and taste of rice dumplings, they were very popular. In 1921, Zhang Jinquan opened the first "wufangzhai" zongzi shop in zhangjianongkou of Jiaxing City, and gradually became famous in Jiangnan by virtue of his exquisite production skills, known as "zongzi king".
The traditional production techniques of wufangzhai zongzi are mainly divided into 36 processes, such as selecting materials, soaking rice, boiling leaves, stuffing, shelling, wrapping, stringing, and cooking. The unique skills and secret recipe of wufangzhai zongzi are formed, which makes wufangzhai zongzi a typical representative of Jiangnan zongzi. At present, there are dozens of varieties of wufangzhai zongzi, such as fresh meat zongzi, Dousha zongzi, ham zongzi, egg yolk zongzi, chestnut zongzi, Zaoni zongzi, Nanhu lingzongzi, etc.
Wufangzhai zongzi production technology has high edible value, cultural value and economic value. Its core lies in the close combination of time-honored brand culture and traditional technology, which fully reflects the unique charm of zongzi as a national food. However, in the process of modernization, traditional zongzi production technology is still inevitably on the verge of crisis. On the one hand, there is an intensive and commercialized trend in the production of zongzi, and the scene of every household making zongzi has become history, and the vast majority of young people can't make zongzi; on the other hand, with the continuous improvement of production automation within the enterprise, there has been a serious crisis in the inheritance of traditional zongzi handicrafts, and various measures are urgently needed to protect them.
