Fuding City is located in the northeast of Fujian Province, in the border area of Fujian and Zhejiang. Its unique altitude, terrain, soil and climate environment have the natural conditions suitable for white tea production.
Fuding Taimu mountain is the birthplace of white tea, with a long history. Tang Luyu's "tea classic" states: "there is white tea mountain three hundred miles to the east of Yongjia County." Experts believe that Fuding is Taimu mountain. In the Ming Dynasty, Tian Yijuan's "boiling spring water products" held that "the tea maker takes fire as the second, and the sun drying as the first, which is closer to nature When the sun dried tea fell into Ouzhong, the standard of picking fresh leaves and the technology of tea making by flaggun were considered as the rudiment of white tea making.
Modern white tea technology flourished in Fuding of Qing Dynasty. Liang Gong of Zhou dynasty recorded in Min Xiaoji: "in ancient times, there were green snow sprouts in Taimu mountain. Today, it is called Baihao, with unique color and fragrance, especially Hongxue cave." It shows that Fuding white tea has a long history. According to records, in 1857, Chen Huan and Zhang Haoqin of Fuding nodded at the willows and propagated them at home. In 1875, the first year of Guangxu in Qing Dynasty, Zhou Kaichen transplanted them again and spread them to Huanggang. The history of making white tea began with Fuding.
FUDING white tea is named for its plump buds, full of white hair and silver like snow. It is not fried or kneaded in the process of production, and it is dry enough with mild fire. With moderate natural oxidation, it retains rich active enzymes and polyphenols. The primary principle and technological process are withering and drying. The primary processing flow of white tea is as follows: fresh leaves withering accumulation drying picking. Refining process: raw tea picking (hand picking) - tea straightening - stacking - baking - packing. Affected by the temperature, white tea production techniques can be divided into normal climate and abnormal climate. FUDING white tea products mainly include Baihao silver needle, white peony, Gongmei (Shoumei) and newly developed craft white tea.
