A brief introduction to the traditional craft of pickled mustard (Fuling pickled mustard)

Applicant: Fuling District, Chongqing

Fuling mustard tuber is produced in Fuling District of Chongqing, which is located in the Three Gorges Reservoir area, where the Yangtze River and Wujiang River meet in the urban area. Fuling mustard was created in the 24th year of Guangxu in the Qing Dynasty (1898). It has been loved by consumers and has been increasingly influential since it came out. 、

The production of Fuling mustard depends on manual labor, complicated process, high technical difficulty and labor intensity, and high production cost. The whole production process includes raw material (green vegetable head) acquisition, peeling, stringing, on shelf dehydration, off shelf, first pickling (adding salt), pool picking and pressing, second pickling (adding salt), pool picking and pressing, trimming and tendon looking, shaping and grading, washing, pool pressing and salting water (pressing), auxiliary materials preparation and later fermentation There are many complicated technical links, such as, installing the altar, clearing and sealing the entrance of the altar, setting up the bamboo basket, finished products and so on.

Fuling pickled mustard, which is made by hand, is fresh, tender and refreshing, with unique flavor, which is incomparable to modern pickled mustard. With the outflow of rural labor and the inundation of the Three Gorges Reservoir area, the processing of Fuling mustard is declining. At present, there are fewer and fewer technicians of the old generation. The traditional craft of Fuling mustard is on the verge of being lost, which needs to be rescued and protected.
