This kind of pancake originated from Fengrun County Chengguan. Fengrun is located in the main thrust of the Grand Royal Road in the east of Beijing (the imperial road for the emperor's patrol). People from outside Guan and east of Beijing have to pass through Fengrun City to enter Kyoto. There are many businessmen and travelers in all directions. Especially the long-distance travelers or people who come to Beijing are generally in the rich rest, so the hotels and restaurants here are crowded, and business is very prosperous. Legend has it that during the Guangxu period, there was a hotel called Shuangsheng on the West Street of Fengrun Chengguan, which was adjacent to a hotel called Yushengxuan. Businessmen who live in Shuangsheng from south to North usually eat near Yushengxuan.

At that time, there was a long distance between the towns, and the businessmen from the south to the north had to take dry food to feed their hunger on the road before they left. At first, most of the dry food reserved in Yushengxuan Hotel was steamed bread, large cakes and hearth oven burning cakes. The longer the dry food lasts, the drier and harder it becomes. It tastes dry and tasteless on the road. On one occasion, the owner of Yushengxuan Hotel was playing a game with someone when a student came to Beijing to catch the exam stayed in Shuangsheng and was preparing to leave for dry food the next day. The student took several hearth burners and helplessly said to the chess-playing boss, "If you add some bean paste stuffing to your burner, how nice it would be like a chess piece!" The boss held up the chess and asked, "What's the good of that?" The student answered, "Add some bean paste stuffing, you will have a taste, smaller, easy to carry it!" After listening to the students'words, the boss thought it was reasonable. He said, "Let's try it. I congratulated you with pancakes in Guest Officer High School!"

Afterwards, the owner of Yushengxuan Hotel consulted the chef about the customer's opinions. They felt that it was no problem to make hearth-oven pancakes into chess pieces, no problem to add bean paste stuffing, but they did not stop there, but in order to prevent the cookies from becoming biscuits on the road. After several experiments, they finally found out how to use chicken oil and noodles to make chess pancakes with bean paste pie. This kind of barbecue is still baked in a hearth oven, because it uses chicken oil and noodles, coupled with the aroma of sesame, it appears tender, crisp and sweet, very popular with visitors.
