Laozao is a local snack, belonging to Sichuan cuisine. Laolao, a kind of wine brewing in ancient Chinese, is a Sichuan dialect, that is, boiled eggs with wine brewing. Put the mash in the pot and boil with some water. Put in the eggs, boil them, put them into small bowl, add lard and sugar. The fermented glutinous rice eggs in my memory are all made of lard. If there's any residue left from lard refining, it's better to add it in. Don't cook the eggs too old. The best thing is that the yolk is raw, which is called tangxin egg.
Fermented glutinous rice is also called Jiuniang, Jiuniang, jiuzao, rice wine, sweet wine, sweet rice wine, glutinous rice wine, jiangmi wine and Fushi wine. It is a kind of flavor food made of glutinous rice or rice by yeast fermentation. It has high heat production, rich in carbohydrate, protein, B vitamins, minerals, etc., which are indispensable nutrients for human body. The mash contains a small amount of alcohol, which can promote blood circulation, digestion and appetite. The composition of the wine changes with the fermentation progress. The mature wine contains 50.108% water, 2.105% alcohol, 3.789% crude protein, 27.765% sugar, 0.301% total acid (0.031 volatile acid, 0.271% nonvolatile acid) and 0.085% ash.
The fermented glutinous rice is clear in color, white in juice and sweet in concentration. It has the functions of Invigorating Qi, promoting blood circulation, activating collaterals, regulating meridians and moistening the lungs. In summer, it can also clear away heat and relieve summer heat. Mash and eggs can be cooked together.
In the countryside, when ordinary guests come to the house, the host will cook a few bowls of mash first, pick up the wind, fill the stomach and warm the heart.
