Zhou Village has a long history of baking cakes. As early as the mid-Ming Dynasty, the Jia Chamber of Commerce and Commerce gathered in Zhoucun. All kinds of snacks came into being at the same time. A kind of "hu cakes oven" pasted with baking Hu cakes was introduced into Zhoucun. The restaurant owner adopted the fragrant and crisp characteristics of coke cakes and created a popular crisp barbecue by pasting Hu cakes. It has a history of more than 1,800 years. According to Ziye Tongjian, in the three years of Yanxi (160 A.D.), Emperor Huan of Han Dynasty, there were people who sold mustaches (sesame pancakes) in Beihai (now in Shandong Province). After the sixth year of Guangxu in Qing Dynasty (1880), the old bakery of "Jiuzhai" used paper packaging which did not pollute the environment. This form has been followed up till now. In the 1950s, the old store of "Jiuzhai" merged into Zhoucun Food Factory and became the predecessor of today's Zhoucun Burnt Cake Co., Ltd. As the successor of a century-old brand, Zhoucun Burning Cake Co., Ltd. inherited the production technology of Zhoucun Burning Cake and further developed it.
Zhoucun pancakes are made from simple materials, such as flour, sesame seeds, sugar or salt. It is famous for its thin, crisp, fragrant and crisp. Zhoucun's cooking method can be roughly divided into three steps:
The first step is to put flour in a basin, add 250 grams of water, and then add salt and soft flour. Wash sesame seeds with water and dry them.
The second step is to twist the dough into strips, pick up forty-eight toppings and make them into regular circles, dip them in water one by one and press them flat on the ceramic piers, then extend them outward into round pancakes, and then wipe them with water to make the water side stick down with sesame. Take the pasted sesame cake blank and stick it on the wall of the hanging furnace face up. Bake it with sawdust fire or charcoal fire until it is cooked. Scrape it down with an iron shovel and hold it with a long spoon.
The third step is to pack them into bags at the later stage. Every 16 of them are wrapped in a package of paper, which is cylindrical in shape. Forty-eight of them are wrapped in three packages altogether. If making sweet crisp pancakes, salt can be changed into Baitang, boiled with warm water and reconciled with flour. It is slightly thinner than salty pancakes. Five hundred grams of flour can make pancakes in three and a half packages, totaling fifty-six.
