Production steps:
Step 1: three eggs, two tomatoes, a handful of leeks, or chives. I happen to have leeks at home.
Step 2: cut the top of the tomato into a cross shape, scald it in boiling water, and then peel it.
Step 3: cut the peeled tomato into pieces, cut the leeks into thin pieces, and break the eggs.
Step 4: heat the oil in the pot, fry the eggs, then put them aside and put in the tomatoes. I didn't make time to take photos, just took a picture of the eggs. Tomatoes don't need to be fried for too long. If they are too soft, they don't take shape. Put leeks and add some salt.
Step 5: out of the pot!

Note: I only add salt to this dish, and don't put other seasonings. Eggs are 1.5 yuan each, which we bought in the countryside. They are authentic Native eggs. They are fried yellow, much better than the eggs we bought in the market. They are sold every cent!
