Production steps:
Step 1: 200 grams of flour, add an egg (add egg noodles) and mix well, cover and wake up for 10 minutes.
Step 2: I use a household noodle press. It's very compact and convenient. It's much more reassuring than the cut noodles I bought. It can't be compared with dried noodles.
Step 3: divide the dough into four parts and press flat.
Step 4: first, press the dough several times until the surface is smooth.
Step 5: after all the dough is pressed with the first gear, evenly spread starch on both sides of the dough (the noodles pressed with starch can not stick, which is a good trick).
Step 6: press the dough in two and three steps. When the thickness is almost the same, start to cut the dough with the thin step (household dough pressing machine is divided into two steps, wide and thin, according to personal preference).
Step 7: place the pressed noodles in the basin.
Step 8: Chop onion, ginger and garlic.
Step 9: mince the pork, and chop the pickled fungus.
Step 10: cut cucumber into shreds and cabbage into shreds or slices.
Step 11: mix sesame paste with chili oil to make spicy sauce.
Step 12: put vegetable oil in the frying pan and bring to a boil. Stir fry the meat in the frying pan with onion, ginger and garlic.
Step 13: add salt and soy sauce, pour in agaric and cabbage, stir well.
Step 14: add a little water, bring to a boil and stew for a while, add chicken essence and marinate.
Step 15: add proper amount of water into the frying spoon, bring to a boil, put in noodles, and boil them in cold water.
Step 16: after twice water the cooked noodles, take them out and put them on the plate. Put the shredded cucumber into the plate (it's better to put them together with chopped coriander).
Step 17: pour the bittern directly into the bowl, and then add a proper amount of sesame juice to mix well.
