Production steps:
Step 1: chili powder for kimchi.
Step 2: fish sauce
Step 3: Four Chinese cabbage leaves, wash and cut into pieces, put into a large basin. Fill half a bowl of water with rice bowl, add 1 tablespoon of salt, pour in cabbage leaves and mix well.
Step 4: put some water in a bowl with a larger bottom area, press it on the cabbage and cover it. Turn every half an hour, let the cabbage evenly soak in salt water, marinate for 3 hours.
Step 5: after marinating the cabbage for 3 hours, pour out the salt water, wash it 2-3 times with clean water, control the dry water and squeeze the water slightly.
Step 6: slice the carrot.
Step 7: 2 tbsp pepper powder, add carrot shreds, mix well.
Step 8: cut half leeks (or leeks) and 1-2 leeks into shreds.
Step 9: a little ginger, 2 cloves of garlic, half an apple or pear, use the thinnest end of the planer to grind into flour, add 2 tsp fish sauce and 1 tsp sugar, mix well, and put into the cabbage.
Step 10: add shredded pepper and carrot, mix well.
Step 11: put in leeks and shredded leeks and mix them gently.
Step 12: look, it's all mixed. Try the taste and add some salt according to your taste.
Step 13: put it into a sealed container, press it tightly and cover it well.
Step 14: let the pickles ferment at room temperature for 1-1.5 days. Then put it in the refrigerator and refrigerated room, and you can eat it in about 3 days.

Note: 1. This is the formula I found out for four outer layers of Chinese cabbage leaves. After eating them in a week, I can make them fresh. If it is near the core of cabbage leaves, to add a few more leaves. 2. You can also put white radish, celery and other favorite vegetables; 3. Spicy vegetables should be put at the end and mixed lightly; 4. Salty seafood released by Korean people, such as salted shrimp, salted squid, scallops and so on. I use fish sauce instead, or shrimp oil or seafood sauce instead; 5. When the amount is large, ginger, garlic, apple or pear can be mashed with an electric mixer.
