Production steps:

Step 1: wash the purple potato, peel it, slice it, steam it in a pot, mash it into mud, add sugar and mix well.

Step 2: put glutinous rice flour and custard flour into the basin, pour in sugar water (put sugar into warm water, stir until all sugar melts), and mix glutinous rice flour into smooth dough.

Step 3: evenly divide the kneaded dough into equal amount of small dough and knead it into a ball.

Step 4: take a dough, wrap it in purple sweet potato stuffing, and rub it into a ball again.

Step 5: put the sesame on the plate, dip the dough with water, put it on the plate to make the surface full of sesame, and pat it tightly with your hand.

Step 6: add more oil into the pot, and when it is 50% hot (you can feel the hot gas when you put your hand on the oil, and there is a bubble when you put a chopstick in the oil), put it into the hemp ball, which will become larger and float.

Step 7: the fried dough should be put on the kitchen paper to fully absorb the excess oil on the surface before eating.

Note: it's not easy to cook the dough. When frying, make sure to use a small fire and keep turning to heat it evenly. The frying time is about 15 minutes. The volume of the cooked dough will become larger and float. Eat the dough while it's hot, and it tastes crisp. Because it's glutinous rice noodles, it's hard to digest, so don't eat too much at a time. Filling materials are optional, including bean paste filling, sugar filling, black sesame filling or milk yellow filling.
