Beijing style moon cake
Introduction:
"Zilaihong" is a traditional Beijing style dim sum. The moon cake is white before baking, but it turns to brownish red miraculously after baking, and there will be a dark red circle on the top of the moon cake, which is exactly the origin of the name "zilaihong". The round red circle on the moon cake is made by boiling one portion of water, one portion of sugar and half of alkali noodles. When this kind of juice is covered on the blank of the moon cake, you can't see the red mark. Only after the moon cake is baked, the red circle will appear. This is also the magic of the red moon cake. "
Production steps:
Step 1: mix white granulated sugar, water and alkali noodles in a pot.
Step 2: boil over low heat until dark. Pour into a bowl and set aside.
Step 3: put 20g flour, osmanthus honey, lard, sesame oil, baking soda and sugar into the basin.
Step 4: add boiling water and knead into dough.
Step 5: wrap the dough with plastic wrap and let it stand for 30 minutes.
