Production steps:
Step 1: clean the fish, drain the water, salt the whole body and marinate for about 10 minutes.
Step 2: heat the oil pan to 80%. Put down the salted fish and start frying over medium heat. Slowly turn to low heat in the middle. Don't turn over the fish. Turn off the fire as soon as it's ready to cook. Fry in place until golden, turn off the heat, cool for a while, and then turn over the other side.
Step 3: fry the other side, be patient and slowly fry. Don't shovel it up immediately after frying. Cool a little to keep the skin intact.
Step 4: after frying, pour a little soy sauce while it is hot.
