Introduction:

"Summer is the best season to eat tomatoes. Tomatoes are rich in VC, B vitamins and carotene. Lycopene is more easily absorbed by the body after it is cooked, and lycopene is very important. But in Chinese food, the simple method of tomato has not changed much except scrambled eggs with tomato and Stewed Beef Brisket with tomato. And this salsa sauce is a common way to eat tomatoes in Mexico, the hometown of tomatoes. Salsa sauce can be served with taco or corn chips. Of course, for me as a Chinese, the best thing to eat is pancakes with sauce beef, lettuce, colored pepper and salsa sauce! If you add a spoonful of sour cream to it, it will be icing on the cake! "

Production steps:

Step 1: wash the tomatoes and cross the top. Put into a clean container, pour boiling water (the boiling water should be over the top of the tomato), soak for about 1 minute. Pour out the water and flush it with cold water. It's easy to peel the tomato. After peeling, dice the tomato.

Step 2: heat the nonstick pan, add olive oil, and then pour all the diced tomatoes into the pan. After stir frying, cover the pan, turn to medium heat and cook until the tomatoes are all soft.

Step 3: when cooking tomatoes, slice the Thai peppers (don't remove the seeds). When cutting hot pepper, in order to prevent hot hands, wear disposable gloves, and never touch your face or eyes!

Step 4: add chopped onion, garlic and pepper to the cooked tomato, and stir fry until the tomato juice is 70% dry.

Step 5: add salt, basil and Xinjiang cumin. Stir fry until the tomato juice is dry.

Step 6: turn off the heat, add apple vinegar and coriander leaves. Mix well and let cool.

Materials required:

Diced tomatoes: 4 cups

Chopped scallion: 1 cup

Thai peppers or Korean peppers: 2

Olive oil: 1 tablespoon

Garlic: 4 cloves

Salt: 1 tablespoon

Apple vinegar: 1 tablespoon

Basil: 2 teaspoons

Xinjiang cumin: 2 teaspoons

Coriander leaves: 8 pieces

Note: 1) the real salsa should use jalapeno pepper, but I haven't seen this kind of pepper in China, so I use Thai pepper or Chaotian pepper instead. I think it tastes good too! 2) When eating tortillas, just add a small spoon of salsa sauce. It's best to go with corn pancakes, sauced beef, lettuce and colored peppers. How delicious!
