Production steps:

Step 12: put bean sprouts, shredded cucumber and cut cold skin in a large bowl. Pour sesame paste, garlic water, seasoning water and spicy oil according to the taste. Mix well and eat.

Water: 400g

Cucumber: 1

Bean sprouts: moderate

Sesame paste: right amount

Salt: right amount

Vinegar: right amount

Zanthoxylum bungeanum: right amount

Garlic: right amount

Note: 1. When mixing the batter for the first time, be sure to add water slowly while stirring. Stir hard, so that the dough is more muscular. 2 wake up for 1 hour, add water for the second time, and then stir. This step cannot be omitted. If it's the first time to add the water completely, the dough won't come out. 3. When steaming the dough, pay attention to the blistering of the cold skin. It will be cooked in half a minute. In the process of steaming, cover the pot to prevent the fire. After steaming, immediately put it in a cold basin to cool 4 vinegar. Don't pour soy sauce directly into the cold skin. The authentic cold skin seasoning water is very important. Be sure to boil it. In fact, there is no special emphasis on the thickness of the pasta. It depends on your personal preference. Generally, it is not suitable to be too thin for the sesame paste cold skin. It is about 5mm thick when steamed.
