Production steps:
Step 1: wash the scallion and drain the water.
Step 2: according to their own preferences, can be cut into small pieces or as long as not too long.
Step 3: beat the eggs well. The quantity should at least cover the scallion in the bowl.
Step 4: put chicken essence, or MSG.
Step 5: put salt. If you put chicken essence, you can put a little less salt. If you put monosodium glutamate, you can put a little more salt, because you don't add any seasoning after that, and the salt will be put at one time. Of course, you can't fry salted eggs with wild onion. :p
Step 6: pour the egg mixture into the scallion segment, mix well and let stand for a while.
Step 7: put walnut oil in the pot, I'm to match with walnut chips. You can choose other oils, such as rapeseed oil, salad oil and other light oils. However, lard is not recommended. It tastes too heavy. The amount of oil is a little more than the usual amount of cooking.
Step 8: after the oil is heated, pour in the egg liquid and turn it over.
Step 9: when the egg liquid is shaped, stir fry it with a spatula, big pieces and small pieces as you like. If you like it very broken, or used to roll pancakes, you can use a spatula to pound it.
