Raw materials for making meizhushan stone:
Main ingredients: 100 grams of minced mandarin fish.
Ingredients: shiitake mushroom, cooked ham, cucumber skin, scallop, Nostoc flagelliforme, Dictyophora indusiae, Auricularia auricula, fresh green beans, 25g each.
Seasoning for making plum bamboo rock:
10 g cooking wine, 2.5 g refined salt, 4 egg white, 15 g chicken oil, 10 g dry corn flour, 1 kg clear soup.
Steps of making meizhushan stone:
1. pour the egg white into the big dish, use chopsticks to pick up and show a snow-white foam. Put the minced fish into a bowl, add a little alcohol and salt clear soup, stir hard, then add egg white, corn flour and a little chicken oil, stir well to make minced fish paste.
2. Put a layer of chicken oil on an 8-inch flat plate, pour the minced fish paste into the plate and spread it into thin slices. Use cucumber skin to carve bamboo code on thin slices; use Lentinus edodes to code into two Crabs; use Nostoc flagelliforme to code into rocks; use scallops and ham to make a dried plum; use Dictyophora, agaric fungus, green beans, ham and cucumber skin to make a dragonfly, that is, a plum bamboo rock. Steam in the drawer for five minutes, take it out, cut it from the side with a knife, and gently put it into a bowl.
3. Pour 1 kg clear soup into the pot, heat and bring to a boil, skim the foam, add the remaining cooking wine and refined salt. For good taste, pour into the bowl with plum, bamboo and rock along the side of the bowl.
