Processing steps of Pearl tofu:

2. Put the bean curd, shrimp, horseshoe powder and ginger powder into a bowl, mix in Shaojiu, refined salt, pepper powder and 1 egg white, mix well and add chicken oil. Add 1 egg white, flour and water flour to make a thick paste.

3. Squeeze the prepared tofu into 8 large balls, drag the paste, roll the bagasse and fry it until it is golden yellow, then put it on the plate.
