Production method

1. The raw materials should be processed in time after entering the factory, which shall not exceed 3 days. The raw materials that cannot be processed in time must be stored in the low temperature room or in the shed, and shall not be drenched or exposed to the sun. When transporting raw materials, the plastic bucket with a capacity of 25 kg should be used. Before use, it must be washed clean before use. The raw materials are crushed after cleaning.

2. When the pulp is put into the pool, it is required to be packed twice. When the next half is filled, 10% artificial yeast is added.

3. During the fermentation, add sugar water (according to the ratio of raw material 1:1), 0.02% of carbon dioxide bactericidal antioxidant, and 0.02% of diamine hydrogen phosphate nutrient, and separate after 3 days.

4. During fermentation, the temperature of the product should be controlled at 20-25 ℃ and the fermentation time should be 6-10 days.

5. The temperature of post fermentation product should be controlled at 20-25 ℃, and the fermentation time should be 30-35 days. During this period, 5% white sugar should be added for post fermentation. Check every 48 hours and make records.

6. Quality requirements after post fermentation: alcohol 10%, residual sugar 0.5%, volatile acid below 0.08%, total acid 1-2.5%, tannin 0.02-0.17%, iron below 15-25ppm.

Quality standard 1. Sensory index: Color: ruby red. Clear mixing: clear and transparent, no obvious suspended solids, no sediment. Aroma: fruity, harmonious wine aroma, rich and prominent wild fruit aroma.

Taste and style: the wine has complete body, sweet and sour taste, mellow taste and long aftertaste. It has the most typical style of natural wild fruit wine.

2. Physical and chemical indexes: alcohol content (20 ℃) 12.5-13.5% (volume), sugar content 13.5-14.5 mg / 100 ml, total acid 0.6-0.5 mg / 100 ml, volatile acid below 0.08 mg / 100 ml, tannin 0.04-0.07 mg / 100 ml.
