Hard toast

Hard toast

Introduction:

"Bata bread has a lot of deformation. The same dough, different shaping and ingredients will make different flavor bread. Hard toast is one of the few changes in the deformation, dough is exactly the same, but later shaping time to completely exhaust, roll into toast type. The toast is crispy, oil-free and sugar free. It's very healthy

Production steps:

Step 1: put the kneaded dough into the fermentor, let it grow at 28 ℃ for about 1.5 hours, take it out, fold and turn it over every 30 minutes. At the end of fermentation, the dough is about three times as big as the original one, and the surface is bubbly.

Step 2: take out the dough, put it on the chopping board and pat it to let out the bubbles. Divide the dough into three equal parts, roll round and let it stand for 30 minutes

Step 3: save the dough, close it up and flatten it with the palm of your hand

Step 4: the dough is rolled up from top to bottom. The dough at the end can be twisted with fingers, thin and easy to seal

Step 5: roll the dough up again

Step 6: roll up a second time from top to bottom

Step 7: roll it into a roll, this time with the end down

Step 8: put three rolls side by side in the toast box (450g), wait for the second serve, 33 ℃, 1.5-2 hours

Step 9: end of second serve

Step 10: preheat the stones in the oven at 250 ℃, pour a cup of boiling water on the stones, and put the dough into the oven immediately. After about 10 minutes, take out the baking tray with stones and bake at 180 ℃ for 30 minutes.

Step 11: because there is no oil and sugar, the bread will harden the next day, just like the French stick. Recommend a way to eat, two eggs, bread slices, soaked in egg, pan low heat fry.
